Italian Skillet Mushroom And Chicken Stew

I love Stew. It’s amazing comfort food and this one is so tasty. It’s full of mushrooms, chicken, tomatoes and green beans and I know you are just going to love it.
Ingredients -
1 Tablespoons Vegetable Oil
1 Pound Chicken Breasts (boned and skinned)
1 Pound Fresh White Mushrooms (quartered, about 5 cups)
1 Cup Onion (coarsely chopped)
1 Cup Celery (diced)
1 Teaspoon Garlic (minced)
2 Cans Italian Stewed Tomatoes (14-1/2 ounces each)
1/2 Teaspoon Salt
2 Cups Fresh green beans (trimmed and halved)
 
Preparation:

1. Heat oil in a large nonstick skillet.

2. Add the chicken and cook it until it’s nice and brown which takes approximately 3 to 4 minutes a side.

3. Remove the chicken from the skillet.

4. To the skillet add the mushrooms, onion, celery and garlic.

5. Cook and stir frequently until its tender which takes about 6 to 8 minutes.

Green Beans
You don’t have to use green beans if you aren’t fond of them you can use whatever kind of vegetable you want to. This recipe can be changed to your family’s liking’s.

Scale this recipe up so you can have leftovers. It saves very nicely and you can have it for lunches and dinners for several nights the rest of the week so you don’t have to cook.
